Home Style Potato Soup

Ingredients

• 1 cup chopped onion

• 1 cup diced celery

• 1 cup peeled, diced carrots (about 3 carrots)

• 2 cups peeled, diced potatoes (about 6 potatoes)

• 4 tablespoons chicken bouillon

• ¾ cup butter

• ¾ cup flour

• 1 quart milk

• Salt & pepper, to taste

Instructions

1. Cook Vegetables

• In a large pot, add onion, celery, carrots, and potatoes.

• Pour in just enough water to cover the vegetables and stir in chicken bouillon.

• Cover and simmer until veggies are tender (about 15 minutes).

2. Make the Roux

• In another large saucepan, melt butter over medium heat.

• Whisk in flour until bubbly and smooth.

• Gradually whisk in milk, cooking until thick and creamy.

3. Combine & Season

• Add cooked vegetables (with their liquid) to the milk mixture.

• Stir well, heat through, and season with salt & pepper.

4. Serve

• Ladle into bowls and enjoy hot with dinner rolls.
