Every now and then, there’s a recipe in my binder that I pull out, make for a gathering, and immediately wonder: Why don’t I make this more often? These Southern-Style Baked Beans are one of those recipes.

  • ½ cup brown sugar
  • ¼ cup distilled white vinegar or apple cider vinegar
  • 2 tsp dry mustard or 2 tbsp Dijon mustard

Note: I usually use Dijon because it gives a little tangy depth, but dry mustard works great too if that’s what you have on hand.

1. Preheat the Oven

Set your oven to 325°F. This lower temperature helps everything cook slowly and evenly, allowing the sauce to thicken up beautifully.

2. Cook the Bacon

In a large skillet, cook the bacon until it’s about halfway done — not crispy, but partially cooked. Remove the bacon and set aside.

Tip: Don’t overcook the bacon here! It will finish crisping in the oven, right on top of the beans.

3. Sauté the Veggies

Using the flavorful bacon drippings, sauté the diced onion and green pepper for about 5 minutes, until soft and fragrant. This step builds depth of flavor that you’ll taste in every bite.

4. Mix It All Together

Add the pork & beans, barbecue sauce, brown sugar, vinegar, and mustard to the pan. Stir everything well and bring the mixture to a gentle simmer.

5. Transfer to the Baking Dish

Pour the mixture into a greased 9×13 baking dish. Lay the partially cooked bacon strips across the top — they’ll crisp up as the beans bake and add that smoky finish we love.

6. Bake It Slow & Low

Bake the beans uncovered for 2 hours, until the top is bubbling and the sauce has thickened. If you like your baked beans extra thick, let them go another 15–30 minutes.

Bonus tip: Let the beans rest for 10–15 minutes before serving. The sauce will continue to thicken as it cools slightly.
