Cinnamon Coffee Cake – Cozy, Homemade, and Freezer-Friendly

Jump to Recipe

Some recipes instantly feel like home. This Cinnamon Coffee Cake is one of them—a soft, buttery cake layered with warm cinnamon sugar and topped with a thick, crumbly streusel. It’s inspired by the classic coffee cake you’d find in your favorite bakery or coffee shop (hello, Starbucks lovers), but made simple with pantry ingredients.

The best part? It freezes and reheats beautifully. You can bake it ahead, slice it, and freeze for later, so you’re never more than a few minutes away from a cozy treat to go with your coffee.

Why You’ll Love This Coffee Cake

  • Rich, But Balanced: Sweet, buttery cake with warm cinnamon notes.
  • Make-Ahead Friendly: Perfect for holidays, brunch, or weekday snacks.
  • Freezer-Friendly: Keeps beautifully—slice, wrap, and freeze.
  • Bakery-Style at Home: Thick streusel and a cinnamon ribbon make it look impressive.

A Helpful Tip for Success

The only slightly tricky step is the cinnamon ribbon that runs through the center. When you go to spread the second layer of cake batter over that cinnamon-sugar mix, the batter can want to lift. Don’t worry—that’s normal. Just take your time, go slow, and use an offset spatula or the back of a spoon. Patience here makes all the difference, and the end result is totally worth it: a beautiful swirl of cinnamon running through every slice.

Ingredients

Streusel Topping:

  • 2 cups brown sugar
  • 2 cups flour
  • 2 teaspoons cinnamon
  • Pinch salt
  • 1 cup butter, softened

Cinnamon Layer:

  • ½ cup sugar
  • 2 tablespoons flour
  • 1 teaspoon cinnamon

Cake Batter:

  • 3 cups flour
  • 2 ¼ cups sugar
  • ¾ teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup butter, softened
  • 1 cup sour cream
  • ¼ cup milk

Instructions

  1. Preheat & Prep
    • Heat oven to 350°F (175°C). Grease an 18×13 pan.
  2. Make the Streusel
    • Combine brown sugar, flour, cinnamon, salt, and butter. Mix until crumbly. Set aside.
  3. Mix the Cinnamon Layer
    • In a small bowl, mix sugar, flour, and cinnamon.
  4. Make the Cake Batter
    • In a large bowl, beat flour, sugar, baking powder, baking soda, salt, butter, sour cream, milk, eggs, and vanilla until smooth.
  5. Assemble the Cake
    • Spread half the batter into the pan.
    • Sprinkle the cinnamon layer evenly.
    • Carefully spread the remaining batter over the cinnamon mixture (go slow to avoid lifting).
  6. Top It Off
    • Sprinkle the streusel topping generously over the batter.
  7. Bake & Cool
    • Bake for 55 minutes or until a toothpick inserted in the center comes out clean.
