Cinnamon Coffee Cake (Homemade & Freezer-Friendly)

This homemade Cinnamon Coffee Cake is soft, buttery, and topped with a thick cinnamon streusel. Inspired by Starbucks but made with simple ingredients, it’s freezer-friendly and perfect for brunch or everyday coffee breaks.

Ingredients
  

Streusel Topping:
  • 2 cups brown sugar
  • 2 cups flour
  • 2 tsp cinnamon
  • Pinch salt
  • 1 cup butter softened
Cinnamon Layer:
  • ½ cup sugar
  • 2 Tbsp flour
  • 1 tsp cinnamon
Cake Batter:
  • 3 cups flour
  • 2 ¼ cups sugar
  • ¾ tsp baking powder
  • ½ tsp baking soda
  • 1 tsp salt
  • 1 cup butter softened
  • 1 cup sour cream
  • ¼ cup milk
  • 4 eggs
  • 1 Tbsp vanilla

Method
 

  1. Preheat oven to 350°F. Grease a 18x13 pan.
  2. Mix streusel ingredients until crumbly.
  3. Mix cinnamon layer in a small bowl.
  4. In a large bowl, mix all cake batter ingredients until smooth.
  5. Spread half the batter into pan. Sprinkle cinnamon layer on top. Add remaining batter.
  6. Sprinkle streusel generously over the top.
  7. Bake 55 minutes or until a toothpick comes out clean. Cool before slicing.
