Mississippi Mud Pie – A Chocolate Lover’s Dream

Ingredients
  

Crust
  • 25 Oreo cookies
  • 6 Tbsp salted butter melted
Brownie Layer
  • 4 oz bittersweet chocolate chopped
  • 3 Tbsp salted butter melted
  • 3 Tbsp vegetable oil
  • 2 Tbsp unsweetened cocoa powder
  • 2/3 cup light brown sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1/4 tsp salt
  • 3 Tbsp all-purpose flour
Cookie Topping
  • 8 Oreo cookies roughly crushed
  • 2 Tbsp powdered sugar
  • 1 Tbsp unsweetened cocoa powder
  • Pinch of salt
  • 2 Tbsp salted butter melted
Mousse Layer
  • 6 oz milk chocolate chopped
  • 1 cup cold heavy cream
  • 2 Tbsp unsweetened cocoa powder
  • 2 Tbsp powdered sugar
  • Pinch of salt
  • Chocolate Whipped Cream
  • 1 cup heavy cream
  • 1/4 cup granulated sugar
  • 3 Tbsp unsweetened cocoa powder

Method
 

Crust
  1. Preheat oven to 325°F.
  2. Crush Oreos into fine crumbs, mix with melted butter, and press into a 9-inch pie plate.
  3. Bake for 12-15 minutes, then let cool.
Brownie Layer
  1. In a microwave-safe bowl, heat chocolate, butter, oil, and cocoa powder in 20-second intervals, stirring until melted.
  2. Mix in brown sugar, eggs, vanilla, and salt until smooth. Add flour and stir just until combined.
  3. Pour into the cooled crust and bake for 25-30 minutes, until a toothpick comes out slightly wet. Cool completely.
Cookie Topping
  1. Roughly crush Oreos in a ziplock bag, then mix with powdered sugar, cocoa powder, and salt.
  2. Drizzle with melted butter and toss to coat.
  3. Spread on a parchment-lined baking sheet and bake at 350°F for 10 minutes. Cool completely.
Mousse Layer
  1. Melt chocolate in 20-second intervals in the microwave, stirring until smooth. Let cool slightly.
  2. Whip heavy cream, cocoa powder, powdered sugar, and salt until soft peaks form.
  3. Stir 1/3 of the whipped cream into the cooled chocolate, then fold in the rest until smooth.
  4. Spread mousse over the cooled brownie layer. Cover and refrigerate at least 3 hours.
Chocolate Whipped Cream & Assembly
  1. Whip heavy cream, sugar, and cocoa powder until stiff peaks form.
  2. Pipe or spread whipped cream over the chilled pie, then top with cookie crumbs.
