This One-Pan Tuscan Chicken is creamy, garlicky, and full of rich flavor from sun-dried tomatoes, Parmesan, and fresh spinach. Everything bakes together in one skillet for an easy dinner with minimal cleanup. Serve over rice, mashed potatoes, or pasta to soak up the irresistible sauce!

Ingredients
  

  • 1 lb chicken breasts 3–4 pieces, lightly pounded
  • 1 cup heavy whipping cream
  • ½ cup sun-dried tomatoes drained & chopped
  • 1 cup chopped spinach
  • 2 tsp minced garlic
  • ¼ cup Parmesan cheese
  • 1 Tbsp butter diced
  • 1 Tbsp chopped parsley
  • Salt pepper & paprika (to taste)

Method
 

  1. Preheat oven to 375°F.
  2. In an oven-proof skillet, stir together cream, sun-dried tomatoes, spinach & garlic.
  3. Season chicken with salt, pepper & paprika and nestle it into the sauce.
  4. Top with Parmesan & dot with butter.
  5. Bake 30–35 min, until chicken reaches 165°F.
  6. Let rest under foil 5 min.
  7. Garnish with parsley and serve over rice or mashed potatoes… and spoon that sauce over EVERYTHING.
