🥣 Biscuit & Gravy Bombs (Perfect for Leftovers + On-the-Go Breakfasts!)

There’s nothing quite like biscuits and gravy — warm, savory, and packed with comfort. But sometimes, you just want that same flavor without needing a plate and fork. That’s where these Biscuit & Gravy Bombs come in!

This recipe was born out of a busy week and a container of leftover sausage gravy sitting in my fridge. Instead of tossing it, I decided to experiment — and I’m so glad I did. I froze spoonfuls of gravy, wrapped them in biscuit dough, and baked them into little golden bundles. The result? A flaky, buttery biscuit on the outside with a creamy, savory center. My whole family devoured them!

They’re easy to prep, easy to eat, and even easier to love. Whether you’re feeding a crowd, prepping breakfasts for the week, or just craving comfort food in a fun form, these are a must-try.

🛒 Ingredients

Here’s all you need to get started:

  • Leftover sausage gravy (about 1 tablespoon per biscuit)
  • 1 can refrigerated biscuit dough (any brand works!)
  • Optional: Melted butter for brushing after baking

Tip: If you don’t already have gravy on hand, I’ve got a great homemade sausage gravy recipe that works beautifully for this — just let it cool before freezing.

👩‍🍳 Instructions

1. Freeze the Gravy

Spoon the cooled sausage gravy into silicone mini muffin molds or an ice cube tray, about 1 tablespoon per section. Freeze until completely solid — this usually takes a few hours or overnight.

2. Preheat the Oven

Set your oven to 350°F and line a baking sheet with parchment paper or lightly grease it.

3. Wrap the Gravy Bombs

Flatten each biscuit round with your fingers. Place a frozen gravy cube in the center, then carefully fold the dough around it and pinch to seal. Make sure there are no cracks or gaps — the seal is important so the gravy doesn’t leak out while baking!

Place each bomb seam side down on the baking sheet.

4. Bake

Bake at 350°F for 20–24 minutes, or until golden brown. This is slightly longer than the biscuit can instructions because of the frozen filling.

5. Serve & Enjoy

Let cool for a few minutes, then serve warm. For an extra cozy touch, brush the tops with melted butter before serving.

⏱ Time Breakdown

  • Prep Time: 15 minutes (plus freeze time for gravy)
  • Bake Time: 20–24 minutes
  • Total Time: About 40 minutes (not including freeze time)

❄️ Freezer-Friendly Tips

Want to make these ahead? You totally can!

  • Freeze before baking: Once wrapped, freeze the unbaked bombs on a tray. Once frozen, store in a zip-top freezer bag. Bake directly from frozen, adding a few extra minutes to the bake time.
  • Freeze after baking: Let baked bombs cool completely, then freeze. Reheat in the microwave or oven until hot.

🧂 Flavor Variations

Want to mix it up? Try these ideas:

  • Spicy kick: Add crumbled bacon or chopped jalapeños to the gravy.
  • Cheesy center: Stir in shredded cheddar with the sausage gravy.
  • Mini version: Use half a biscuit and less gravy for smaller, party-friendly bites.
  • Vegetarian version: Use mushroom gravy or meatless sausage in place of pork.

🥳 Perfect For…

  • Holiday brunches
  • Meal prepping for school or work mornings
  • Weekend breakfasts
  • Baby showers, bridal showers, and potlucks
  • Freezer meal swaps
