Spinach & Cream Cheese Stuffed Chicken

Looking to break out of your boring chicken rut? This Spinach & Cream Cheese Stuffed Chicken is one of my new favorite ways to change things up! The creamy spinach filling is packed with flavor, and when baked with juicy chicken breasts, it makes the perfect healthy dinner.
I originally made this when I was looking for something different to meal prep — and my family loved it! The filling is perfectly seasoned, and next time I’ll season the chicken breasts a little more (with onion powder, paprika, or garlic powder — so many good options). This recipe is simple, healthy, and delicious — and great for busy weeknights!

Ingredients
  

Ingredients (for 4 servings):
  • 1 Tbsp extra virgin olive oil
  • 3 small shallots or 1/2 red onion diced (divided — half for spinach, half for roasting)
  • 1 cup spinach coarsely chopped
  • 1 tsp garlic powder
  • 4 oz cream cheese
  • 1 egg
  • Sea salt to taste
  • Black pepper to taste
  • 4 boneless skinless chicken breasts
  • Paprika garlic powder, onion powder (or your favorite chicken seasoning)
  • 1 orange bell pepper diced
  • 2 cups cherry tomatoes halved

Method
 

  1. 1️⃣ Prep: Dice the shallot. Chop the spinach. Dice the bell pepper. Cut cherry tomatoes in half. Preheat oven to 375°F. Lightly grease a baking dish.
  2. 2️⃣ Sauté: Heat olive oil in a pan over medium heat. Add half of the shallots and sauté until soft (1–2 min). Add spinach and cook until wilted. Remove from heat and let cool slightly.
  3. 3️⃣ Mix filling: In a small bowl, mix garlic powder, cream cheese, egg, sautéed spinach. Season with sea salt and pepper to taste.
  4. 4️⃣ Season & stuff chicken: Lightly season chicken breasts with paprika, garlic powder, onion powder, or your favorite chicken seasoning. Cut a pocket in the side of each breast (don’t cut all the way through). Fill with spinach mixture. Secure with toothpicks if needed.
  5. 5️⃣ Bake: Place stuffed chicken in the baking dish. Scatter remaining shallots, diced bell pepper, and cherry tomatoes around the chicken.
  6. 6️⃣ Cook: Bake for 35–40 minutes, or until chicken is cooked through (internal temp 165°F).
  7. 7️⃣ Serve & enjoy!
