1️⃣ Prep: Dice the shallot. Chop the spinach. Dice the bell pepper. Cut cherry tomatoes in half. Preheat oven to 375°F. Lightly grease a baking dish.
2️⃣ Sauté: Heat olive oil in a pan over medium heat. Add half of the shallots and sauté until soft (1–2 min). Add spinach and cook until wilted. Remove from heat and let cool slightly.
3️⃣ Mix filling: In a small bowl, mix garlic powder, cream cheese, egg, sautéed spinach. Season with sea salt and pepper to taste.
4️⃣ Season & stuff chicken: Lightly season chicken breasts with paprika, garlic powder, onion powder, or your favorite chicken seasoning. Cut a pocket in the side of each breast (don’t cut all the way through). Fill with spinach mixture. Secure with toothpicks if needed.
5️⃣ Bake: Place stuffed chicken in the baking dish. Scatter remaining shallots, diced bell pepper, and cherry tomatoes around the chicken.
6️⃣ Cook: Bake for 35–40 minutes, or until chicken is cooked through (internal temp 165°F).
7️⃣ Serve & enjoy!
